Refrigerator Cucumbers, Onions and Peppers


 
4 thinly sliced cucumbers
1-large sliced red onions
1-large sliced green bell peppers
1-tbsp salt
2-cup white vinegar
1 1/2-cups sugar
1-tsp celery flakes
1-tsp red pepper flakes



Mix cucumbers, onions, peppers and salt; set a side.

Put vinegar, sugar, celery flakes and pepper flakes in a pot and bring to a boil. Remove from heat and add 2 handfuls of ice until melted.

Place all veggies in large mouth canning jars (2 quarts or 1 half gallon jar).

Pour mixture over cucumbers, store in refrigerator. Will keep up to 2 months in your fridge.

Makes 2 quart jars.

Zucchini Cookies

1½ cups flour
1 cup sugar
½ teaspoon Baking Soda
½ teaspoon salt
¼ teaspoon nutmeg
¾ teaspoon cinnamon
¾ cup shortening
1 egg
1 cup grated zucchini
1¾ cups quick oats

Frosting
½ cup butter, softened
3 Tablespoons milk
2 teaspoons vanilla
3-4 cups powdered sugar

Preheat oven to 400 degrees F.  Combine flour, sugar, baking soda, salt, nutmeg and cinnamon together in a large bowl and stir to combine ingredients well. Cut in shortening. Beat in egg until well combined. Add zucchini and oats and beat until evenly mixed in.

Spoon drops of cookie dough onto greased cookie sheet.  Bake at 400 degrees F for 8-10 minutes. Let cool.

Frosting: Cream butter in a medium bowl. Add remaining ingredients and beat until smooth. Add more milk and/or powdered sugar until desired consistency is reached. Frost cookies once they are completely cooled and sprinkle the tops with a little nutmeg.

Caring for a Fresh Christmas Tree from Country Harvest Greenhouse

Keep your Fresh Christmas Tree looking it's best and your home and family safe.

CARE TIPS

Start out right
- Always do a fresh cut. We’ll gladly do it for you at the store. If you prefer to do it, remove at least 1/2”. 
- Keep the bark at the base (and don’t cut into a V.) The bark absorbs the most water!

Your tree needs plenty of water!
- Get your tree in water as soon as possible after your fresh cut is made. 
- Using a stand with a reservoir base is the best way to maintain freshness. Stands should provide about 1 quart of water per inch of trunk diameter. 
- Keep it full the first day especially. Your tree can absorb up to 1 gallon of water in the first 24 hours!  
- Check every day/every other day to ensure the tree has water.  Never let the level get below the trunk bottom.
- Some people put an aspirin or lemon-lime pop in the water to help keep it fresh.
- A well-watered tree will lose fewer needles, but all fresh trees will lose some needles.

Maintenance
- Check for sap seepage - the sooner you clean it up the easier it will be.
- Keep away from heat sources.  Lowering the room temperature will slow the drying process. 
- Use of lights that produce low heat, such as miniature lights, will reduce drying of the tree.

Disposal
- At the end of the season, you can take advantage of one of the many tree drop-off locations in the area -- or put it in your garden.  When spring comes, you can chip it into compost for nutrition for your garden.


SAFETY TIPS

- Don’t block any exits when placing the tree.
- Don’t overload electrical circuits.  Connect no more than three strands of mini string sets and a maximum of  50 bulbs for screw-in bulbs. Read manufacturer’s instructions for number of LED strands to connect. 
Don’t leave a dried out in the home or garage, nor place outside against the home. 
- Don’t ever burn any part of a Christmas tree in a wood stove or fireplace.

- Do place breakable ornaments high, out of reach of children and pets.
- Do keep the tree at least 3 feet away from open flames or heat sources (fireplaces, heaters, heat vents, candles), which may dry it out prematurely and pose a fire hazard.
- Do inspect light sets. Make sure they are not frayed or chewed, and that connections are secure.
- Do always  turn off the tree lights when leaving the house or when going to bed.
- Do monitor the tree for freshness. After Christmas, or if the tree is dry, remove it from the house.

Strawberry Dessert

This decadent dessert is similar to the idea of the popular "fruit pizza".  It's a wonderful use for our fresh Michigan Strawberries at Country Harvest Greenhouse.

 2 Betty Crocker Sugar cookie mixes
16 ounces softened cream cheese
2 cups sugar
1 to 2 cups cool whip
2 or 3 lbs. strawberries washed and sliced
Strawberry glaze

Whipped Cream for topping

Preheat oven to 375.

Prepare the cookie mixes with the butter and egg as the directions on the bags say to. Spread in a Texas sheet cake pan (like 10x15 I think) to make the crust. Bake at 375 for about 15 minutes or until golden brown.

Mix softened cream cheese and sugar with hand mixer until well blended. Then fold in the cool whip. When cookie crust is done and slightly cooled spread the cream cheese mixture over the crust.

Then mix strawberries with glaze of your choice and pour the mixture over the top and chill for about four hours or more

Cucumber Tips and Tricks

Cucumbers are a popular and prolific veggie -- and apparently they have many other great uses besides being a delicious addition to any meal.  

You can find homegrown Michigan cucumbers at Country Harvest Greenhouse during the summer months.






1. Cucumbers contain most of the vitamins you need every day, just one cucumber contains Vitamin B1, Vitamin B2, Vitamin B3, Vitamin B5, Vitamin B6, Folic Acid, Vitamin C, Calcium, Iron, Magnesium, Phosphorus, Potassium and Zinc.

2.For a pick me up in the afternoon... Put down the caffeinated soda and pick up a cucumber. Cucumbers are a good source of B Vitamins and Carbohydrates that can provide that quick pick-me-up that can last for hours. Slice some and put in your water bottle.

3. If you rub a cucumber slice along your bathroom mirror, it will eliminate the fog and provide a soothing, spa-like fragrance.

4. Place a few slices of cucumber in a small pie tin and your garden will be free of pests all season long. The chemicals in the cucumber react with the aluminum to give off a scent undetectable to humans but drive garden pests crazy and make them flee the area.

5. Looking for a fast and easy way to remove cellulite before going out or to the pool? Easy Strawberry Banana Cheesecake Dessert

Here's a fun and easy summer dessert the kids are sure to love - plus it packs in plenty of fruit!

You can find sweet, delicious Michigan Strawberries at Country Harvest during the month of June.









1 bag mini marshmallows
16 oz of vanilla yogurt
1 regular size tub of cool whip
1 package of nobake cheese cake filling

Stir in
1-2 quarts of sliced up strawberries
3-4 sliced up bananas

Other fruits can be substituted or added as desired

Best served chilled and same day due to banana discoloration

Infused Water

Enjoy summer with a cool, flavored water that is good for you.

 
1. Green tea, mint, and lime - For fat burning, digestion, headaches, congestion and breath freshener.

2. Strawberry and kiwi - For cardiovascular health, immune system protection, blood sugar regulation, digestion.

3. Cucumber, lime, and lemon - For water weight management, bloating, appetite control, hydration, digestion

4. Lemon, lime, and orange - For digestion vitamin C, immune defense, heartburn, (Drink this one at room temperature)

Yellow Squash Casserole

 
Here's one way to get the kids to eat those vegetables! :)  Be sure to visit us at Country Harvest Greenhouse to get local yellow squash when in season!

2 pounds of yellow squash (about 4 cups)
1/2 large onion, chopped
1 sleeve of Ritz Crackers (about 35 crackers)
1 cup cheddar cheese
2 eggs
3/4 cups milk
1/2 cup butter, melted
salt and pepper, to taste

Directions:

Preheat oven to 400 degrees F.


Lightly steam squash and onion in steamer basket* for about 5 minutes. Drain and set aside.
In medium bowl, combine cracker crumbs and cheese.


In large bowl, add drained squash and onion and gently fold in 1/2 the cracker/cheese mixture.
In a small bowl, whisk together egg and milk, then add to squash mixture.

Melt 1/2 cup of butter. Add half the melted butter to the squash mixture. Season with salt and pepper.
Spread squash mixture into 9 x 13″ baking dish. Top with remaining crackers and pour remaining butter over dish.


Bake at 400 degrees F for 25 minutes until lightly brown.

75 Uses for Baking Soda

1. Use it as an antacid.
2. Use it as underarm deodorant by applying it with a powder puff.

Favorite Things: Homemade Hawaiian Bread (or Rolls)

I am a huge fan of hawaiian dinner rolls.  My sister-in-law recently gave me this recipe and I've enjoyed making a few batches.  It's a delicious, slightly sweet bread. Very similar to the orginal, though the texture is not the same in my experience.  (Note the recipe variation at the bottom, if you want to give it a try.)

6 c. all purpose flour
3 eggs
1 c. pineapple juice
1 c. water
3/4 c. sugar
1/2 t. ginger
1 t. vanilla
2 pkgs yeast
1 stick butter or margarine, melted

Beat eggs; add pineapple juice, water, sugar, ginger, vanilla and melted margarine.  Add in 3 cups of flour and stir till well mixed.  Sprinkle in yeast one package at a time and stir till well mixed.  Gradually add the other 3 cups of flour.  Mix well.  Will be a very sticky dough!

Leave in the mixing bowl, cover and rise 1 hour in a warm place.  Remove from bowl onto well-floured surface and knead in 1/2 cup flour -- a bread scraper is a huge help right about here.  Knead about 10 times. Will still be a very sticky dough.

Grease pans for desired loaves or rolls:
  • For loaves, you'll need three 8-inch round cake pans. 
  • For rolls, this will fill a double-sheet cake pan (or two 9x13 pans and possibly one more small one).
Form dough into round loaves or rolls.  Once again, my bread scraper was a lifesaver here.  I used it to cut the sticky dough into my desired number of pieces.

Cover loaves/rolls and rise 1 hour in a warm place. Bake at 350 degrees, 20-30 minutes for breads and 10-12 minutes for rolls.

Variation to yield a fluffier bread
I just found these alterations to the above recipe online, for those who want a fluffier texture:

Use 1 1/2 cups of pineapple juice and 1/2 cup of water. Heat this mixture to 110 degrees and proof the yeast in it. Mix the eggs, sugar, melted butter, ginger and vanilla together. Put 6 cups of King Arthur Bread Flour into a bowl. Then mix in the egg mixture, then the pineapple juice, water and yeast mixture. After mixing, let rise for 1 1/2 hours. Punch down, knead, divide into 3 loaves. Place each loaf into a greased round cake pan, let rise for another 1 to 1 1/2 hours. Bake at 350 degrees for about 20 - 25 mins. Brush with melted butter when you take out of oven.

Favorite Things: Roasted Winter Squash Soup

This soup is amazing - creamy, rich, and so very good for the soul. 

First: Roast the Squash

2 -3 medium-sized squash: butternut, acorn, delicata, etc
     (you will need 2 - 3 cups of roasted squash for your soup)
olive oil
salt & pepper


To roast, wash the outside of the squash, carefully cut open (sometimes it's easier to remove the stem first), and clean out.  Lightly drizzle with olive oil and sprinkle with salt and pepper.  Turn cut-side down in a large pan and cook at 375 degrees for 1 hour, or until squash flesh is very, very tender and no longer hard or stringy.

Allow the squash to cool, then gently scoop the flesh out into a large bowl, making sure not to get any skin.  You can either choose to blend your squash now, or wait until it is in the soup.

Should you care to stop here, I say go ahead!  Pureed squash is pure heaven in my book!


Second: Make the Soup

2-3 cups roasted squash
2 quarts chicken broth (or vegetable broth)
1 small onion, finely chopped
olive oil & butter
salt & pepper
immersion (or regular) blender


Cook the chopped onion in a little bit of olive oil and butter.  Once onion is tender, add chicken broth and squash pulp.  Add salt and pepper to taste.  Simmer about 20-30 minutes.  

To puree the soup, either allow to cool and carefully blend a few cups at a time in a regular blender or very carefully use an immersion blender set on low to blend to a smooth consistency.  (Here is where it is easier if the squash flesh was already pureed to start with.)

Notes:
- Roasting extra squash is good.  If you like a thicker soup, you add more squash flesh.  This is something you can eyeball.  The bonus is you get to eat any extra squash you don't use in the soup!

- This makes a lot, so throw some in the freezer for a cold winter day.  Or, a warm spring one for that matter.  Squash soup is good all the time!

Variation:
- My mom made a version with sweet Italian sausage, and I have to say, it worked for me.  Gave it a nice zip and depth.

DIY Cookie Sheet Cleaner

 
Simply put  about 1/4 cup of baking soda in a small glass bowl and squirt in hydrogen peroxide until it makes a nice paste.

Then you rub it on the offending dirt/stain/grease. You can usually just use your fingers, but you can also use a small sponge as well.

Christmas Candy Sleighs

You'll Need:
Hot glue gun
1 standard Kit Kat bar
2 candy canes
10 Hershey bars (stacked 4, 3, 2, 1)
ribbon & a bow on top

No Bake Pumpkin Cheesecake

A great choice for fall and Thanksgiving treats!
For the crust:
1 sleeve graham crackers
½ stick (4 T.) butter, melted
2 T. sugar
2 T.brown sugar



For the filling:
1 8-ounce package cream cheese, softened to room temperature
1 15-ounce can pumpkin puree
3 teaspoons pumpkin pie spice
1 1-ounce package cheesecake-flavored instant pudding mix
1 14-ounce can sweetened condensed milk
1 12-ounce container frozen whipped topping, plus extra for garnish if desired

Instructions:

Place the graham crackers in the bowl of a food processor and pulse the crackers into fine crumbs. Add the melted butter, sugar and brown sugar and pulse until combined.

Spoon the crumbs into individual 9-ounce plastic cups (or other individual sized cups for serving). Place in the refrigerator to set while you are preparing the filling.

In the bowl of a stand mixer with the paddle attachment, beat the cream cheese until light and creamy.

 Add the pumpkin, pumpkin pie spice, and pudding mix and beat until completely mixed, scraping down the sides and bottom of the bowl to ensure that all ingredients are well combined. Add the sweetened condensed milk and mix again until well combined.

Change your stand mixture attachment to the wire whisk. On slow speed, fold in the tub of Cool Whip until well combined.  Allow the mixture to sit in the refrigerator for about an hour to firm up.
Using a large pastry bag with a large tip, or a spoon, top the graham cracker crust in each cup with the pumpkin mixture and refrigerate until ready to serve.
Garnish with additional whipped topping if desired.

DIY Ant Killer

Simple and made with common household ingredients.

A small, shallow dish
5 Tbsp of baking soda
5 Tbsp of powdered (or confectioners) sugar

Mix the two powders together and then place small amounts against the walls or other areas where you would not normally walk but where you would normally see the ants.  You can also leave some in a dish, as the picture shows.

The ants will be attracted to the sugar and will eat some of it and collect more to take home to feed others, so all of them will get their share.

The sugar and baking soda powders are similar in size and, once mixed together, the ants cannot separate the two items, so, as they eat the sugar, they will also ingest the baking soda, which they would otherwise never touch. This is the reason for using powdered sugar.

Once the ants eat the baking soda it will react with the formic acid in their stomachs and cause gas. The bodies of ants are unlike humans and they cannot eliminate gas so it will build up inside them and cause them to literally explode
 

NOTE: Powdered sugar is essential. You cannot use regular white sugar because of the larger grains
of sugar.   The powdered sugar mixes exactly with the baking soda.

DIY: Laundry Soap 2.0

Way back, I shared another DIY Laundry Soap, one that I have actually used many times.  Here is another recipe I've seen floating around that has added ingredients, including a great smelling fabric softener.  I think I'll give this version a try!


Ingredients:

4 lb 12 oz Box of Borax
3 lb 7 oz Box of Arm & Hammer Super Washing Soda
3 lb Container of OxyClean
2 (14.1 oz) Bars of Zote Soap (or Fels Naptha if you cannot find Zote in your area)
4 lb Box of Arm & Hammer Baking Soda
1 or 2 (55 oz) Bottle of Purex Crystals Fabric Softener (or use 3 to 4 bottles of Scentsy Washer Whiffs)

Tools:
- large container to store your soap
- Measuring cup
- Large mixing bowl or bucket
- Food processor

Use a food processor to grate the Zote (or Fels Naptha). Use a very large bucket and combine ingredients using a layering method. Take a small amount of each ingredient and layer it on top of each other, then use a large spoon to mix it all together. Do this about five times, or until all ingredients have been mixed in.

Using the Detergent:When washing, you need only 1 to 2 tablespoons, depending on the size of your load.

Note: If you opted to put the Purex Crystals in your batch, you can scoop the detergent right into your bottle and use the cap as your measuring spoon. There are 3 lines on the side and the middle one is approximately 2 Tablespoons.
